Today’s Featured Foxy Foodie is Charlotte from The Runner Beans! I just discovered Charlotte’s blog and I’m a big fan. She writes a lot about running and other fitness activities, and preaches moderation in eating (which I completely agree with!) Check out her post about Eating in NYC after running the Marathon it features some amazing food photography and great eats in NYC! Also, Charlotte is hosting a 21 Day Yoga challenge starting in January that I’m definitely getting on board for! Check it out!
What kind of “foodie” are you (i.e. Paleo, Vegetarian, Flexetarian, or do you just love all food? :-)) and why?:
I’m an ‘everything in moderation’ sort of girl. Life is too short to deny yourself, it’s just about getting the right balance.
If you had to eat one food every day for the rest of your life, what food would it be?:
Chocolate, or froyo (can I have froyo topped with chocolate?)
Are there any foods you don’t like or refuse to try?:
I hate pickled things, I always take my gherkin out of my burger and put it on someone else’s plate!
When/where did you learn how to cook?:
I’ve always cooked, for as long as I can remember I’ve helped my Mum out in the kitchen.
What is your favorite thing to cook?:
I love making normal meals with a healthy twist, teaching my friends and family that you can eat healthily without losing out on flavour. I love to eat baked goods but writing recipes for cakes is so hard!
What is the best (or most memorable) meal you’ve ever had?:
I was lucky enough to eat at the Noma pop up restaurant when it came to London a few years ago- we ate live ants in cabbage!
Have you found any new recipes lately that you’re dying to try?:
I love looking through Pinterest, and make all sorts of indulgent looking desserts, but find mid-week meal ideas there all the time. Everything on Smitten Kitchen!
Do you have any embarrassing kitchen stories or recipe disasters to share?:
I once had such a high temperature that when I put my face next to the oven, I thought it was on. 45 mins later and our quiche was still completely cold!
What is your best tip(s) for eating healthy?:
Make it yourself- that way you can control what’s gone into it, with no nasty chemicals or unnecessary added sugar.
Add extra fruit and veggies to everything to bulk it out.
Wholegrain over white, every time.
Be careful of portion sizes, even with ‘health’ foods.
